Every year, particularly during family gatherings and visits with friends, I enjoy preparing my renowned indulgent fluffy gin and tonic waffles. Yes, you read that correctly—gin and tonic waffles. This dish has become my hallmark contribution at various dinner parties and special occasions, and I must admit that it’s a particularly indulgent treat that I prefer to keep to myself. 😉
As it’s that time of the year when people come together, I would like to share my recipe, which I believe is an excellent addition to any gathering, especially if you wish to introduce something unique.
Are Gin & Tonic Waffles Easy To Make?
Absolutely easy and remarkably quick! Fluffy griddle waffles can be prepared in no more than 12 minutes. The preparation itself requires merely about 5 minutes. The most challenging aspect is the 20-minute wait for the dough to rise. 🙂
I have recently begun using Shortcross Gin, which I discovered during my excellent trip to Dublin. It possesses a very clean and crisp flavor that harmonizes perfectly with my recipe.
Preparation: What Will You Need?
- 1 x small packet of active yeast (approximately 8-10 grams or 1/4 ounce).
- 3 x small tea cups of whole or semi-skimmed milk.
- 1 x generous teaspoon of brown sugar.
- 4 x small cups of sieved plain flour.
- 4 x Eggs.
- 1/2 x cup of melted (salted) butter.
- 1 x teaspoon of Vanilla extract.
- 1/2 x teaspoon of cinnamon.
- 1 x pinch of nutmeg.
- 2 x shot glasses of gin.
- 1/5 x cup of tonic.
- 1/2 x lemon.
Method: How To Make Them Fast…
- After dedicating about 5 minutes to gather your ingredients, obtain a large mixing bowl and whisk together the brown sugar, yeast, flour, and spices.
- Once the dry ingredients are mixed, take the eggs and whisk them in a separate bowl along with the active yeast.
- Melt your salted butter in a pan or microwave.
- Add all the wet ingredients (butter, eggs, etc.) into the dry mixture.
- Incorporate your vanilla extract, along with the shots of gin and tonic.
- Allow the mixture to rise for approximately 30 minutes before proceeding to griddle your waffles.
- Acquire a griddle pan or pancake maker and pour in the desired amount for one fluffy waffle.
- Increase the heat to high to ensure the exterior of the waffle cooks faster than the center, aiming for a gooey interior.
- Allow a few minutes for the base to turn golden brown, then flip the waffle for an additional minute. This technique will produce a doughy and soft interior, while the outside will achieve a golden brown finish.
- Drizzle a mixture of lemon juice and caster sugar onto the waffles.
Once your mixture has risen, you are poised to begin griddling your waffles.
