While champagne cocktails and various beverages are certainly delightful, there is ample room to expand your wine repertoire with this unique concoction!

1. Historical Background of Oak Leaf Wine

One of my cherished childhood memories involves gathering large quantities of oak leaves with my grandmother from the fields and hills surrounding our quaint Welsh village. This pastime not only brought us joy but is also a tradition that seems to have been passed down through generations, likely originating with my great-grandmother. This time-honored beverage, affectionately known as an old-fashioned drink, undeniably stands the test of time.

Recently, I discovered my grandmother’s recipe tucked away in one of her antique notebooks, which she used to chronicle her culinary innovations. Admittedly, it had many torn pages and crossed-out words, suggesting that her culinary journey included its fair share of trials and errors. 😉

This particular recipe was referred to as ‘Gwin Dail Derw‘ (in Welsh), which roughly translates to ‘irresistible wine to make and celebrate with.’ While the literal translation may not convey that sentiment precisely, it undeniably refers to oak leaf wine 🙂.

Is It Easy To Make?

In contrast to many other types of wine, the preparation of oak leaf wine requires a fermentation period of no more than 16 days, making this a notably swift process in winemaking. The preparation and bottling time is approximately 40 minutes, with standing time potentially as brief as 90 days.

3. Required Ingredients

To produce a batch of 6 bottles of oak leaf wine, the following ingredients will be necessary:

  • 2 brown paper bags filled with cleaned and washed oak leaves collected from the tree.
  • 1 standard-sized piece of fresh ginger.
  • 2 kg of white sugar (or 1.5 kg for a drier wine).
  • 500g of chopped raisins.
  • 15g of yeast.

4. Step-by-Step Method to Create Delicious Oak Leaf Wine

  • First, place your cleaned oak leaves in a suitable ovenware dish large enough to accommodate one entire bag.
  • After placing the leaves, boil water and pour it over the leaves, ensuring they are fully submerged.
  • Allow the leaves to soak in the water for 5 days, then strain the liquid using a muslin cloth or sieve.
  • Once the liquid is separated, reheat and boil it, incorporating the ginger and your chosen amount of sugar.
  • After boiling for 30 minutes, remove from heat and add the chopped raisins and yeast.
  • Cover the mixture completely and permit it to ferment for 16 days.
  • After fermentation, strain the liquid away from the raisins and ginger, then bottle it.
  • When serving, consider adding a slice of lemon and a dried oak leaf for seasoning. This delightful beverage can be refreshing on a hot sunny day, while during winter, it can be warmed for a cozy seasonal treat. Yum!

    5. Bottling Duration

    The wine may be stored in a cool, dry environment for approximately 3 months. However, it is posited that the flavor improves the longer the wine remains bottled, or at least that’s what my grandmother believed!
